Pablo Fernández-Valdés

With almost 30 years of experience within the hospitality industry, Pablo’s career includes working for some of the most renowned hotel groups and brands including MHI, Grupo Tragaluz And SLOW Hospitality Group. A 10-year tenure with MHI as a Resident & General Manager upon graduation, was an instrumental chapter of his hotelier experience, managing five separate properties in different countries including Spain, Bali, Mexico, and the Dominican Republic.

Following his time at MHI, he assumed the role of Managing Director at the award-winning hospitality company, Grupo Tragaluz, with hundreds of employees and 22 Restaurants based out of Barcelona, Madrid, and Mexico City; a noteworthy role in growing their business, overseeing new openings and positioning the brand. While at Grupo Tragaluz, Pablo’s responsibility was key in developing multiple award-winning Boutique Hotel OMM over a four-year period in Barcelona as Managing Director – working with the world’s top-ranked Michelin-star chefs the Roca Brothers. ROCA Moo Restaurant at Hotel OMM was awarded with a Michelin Star that was maintained throughout the history of the establishment.

Pablo also joined SLOW in 2018 to look after the brand’s growing portfolio of hotels in Germany, Portugal, Ibiza, and Mexico as COO of the company. As Fernández-Valdés continues to develop an ambitious pipeline of future developments, he strives to sustain the ethos of sustainable projects. In 2013 founded Green Shoes Consulting, a hospitality consulting company specializing in holistic green projects that are sustainable and have minimum impact on the planet, as well as asset management with strategic business acumen driven to deliver operational and financial excellence.

Adding to his ventures, in 2022, Pablo co-founded NUDO, a restaurant in Es Figueral Ibiza, collaborating with chefs from NOMA Copenhagen. In 2023, he co-founded Aguamadera Ibiza, an agrotourism project in the Balearic Islands offering a quiet luxury stay amidst the rural environment where silence, nature, respect, and privacy are key.
