Pablo Fernández-Valdés has spent nearly three decades working across hotels, restaurants and hospitality concepts around the world.
His career includes the management of five Meliá properties internationally, followed by his role as Managing Director of Grupo Tragaluz, overseeing 22 restaurants and Hotel Omm, home to the Michelin-starred Roca Moo. He later served as COO of SLOW, overseeing hospitality properties across Europe and Mexico.
In 2013, he founded Green Shoes, drawing on this experience to pursue an independent approach to hospitality consulting. His expertise spans the entire hospitality lifecycle, from concept development and strategic planning to brand creation, operations, asset management and owner’s representative.
